Smokey Turmeric Cauliflower Rice

Smokey Turmeric Cauliflower Rice


 Prep Time 5 minutes

Ingredients

  1. Heat the fat on medium heat in a large cast iron skillet.
  2. Add the cauliflower rice (no need to thaw if you're using frozen).
  3. Next, add the salt and spices.
  4. Saute the cauliflower rice, stirring every couple of minutes.
  5. Serve when tender!

Recipe Notes

Frozen cauli-rice will take longer to cook than fresh, but you'll be eating Smokey Turmeric Cauliflower Rice in 15 minutes or less!

Instant Pot Chicken Tikka Masala

Prep time: 10 minutes
Cook time: 10 minutes (plus heat up time)
Total time: 20 minutes

Servings: 6

1 Tbl butter or ghee
2 Tbl coconut oil
1 large onion diced
1 Tbl garam masala
2 tsp salt (more to taste, if needed)
1 tsp cumin
1 tsp turmeric
1 tsp ground coriander
1 tsp chili powder
1/2 tsp ground pepper
6-7 cloves of garlic, diced
2" knob of ginger peeled and diced
24 oz can of crushed tomatoes
2 1/2 lbs boneless, skinless chicken breast cut into 2" cubes
3 Tbls yogurt
2 Tbls almond or cashew butter
1/2 C bone broth

Instructions:
1. Press the saute button on the Instant Pot and add the butter or ghee and coconut oil to melt.

2. Add the diced onion and saute for 3-5 minutes.

3. Add the spices and stir, cooking about 1 minute, until fragrant.

4. Then add garlic, ginger, crushed tomatoes, and 1/2 C of broth.

5. Place the cubed chicken breast into the Instant Pot, submerging it under the tomato-spice mixture.

6. Lock the lid, make sure the vent is sealed, and press the manual button. Adjust the time to 10 minutes.

7. When the Instant Pot beeps, release the pressure immediately.

8. Using a slotted spook, remove the chicken pieces from the sauce, place into a bowl, and set aside.

9. Stir in the almond or cashed butter and yogurt.

10. Using an immersion blender, blend the tomato sauce until smooth and thick.

11. Return the chicken to the blended sauce and serve.

Nancy's Cheese Ball

I love a good cheese ball...and this one is one of my all time favorites!

2, 8oz packages cream cheese
3 stalks green onions
1Tbs Bon Apetit (or if you can't find Bon Apetit like me you can use equal parts celery salt and onion powder, so 1/2 Tbs of each)
1 Tbs Miracle Whip
1 tsp vinegar
1 tsp Worchestershire sauce
1/2 tsp mustard (you can use whatever kind you like best.  My favorite is spicy brown)

Mix together well with an electric mixer.  Make into one large ball or two smaller ones.  I line a small glass bowl with saran wrap and pack the cheese mix into it.  After it chills it's easy to lift the saran wrap out and turn the "ball" over onto a serving tray.  Can also roll balls in choppped pecans.  Refrigerate overnight for the flavors to blend (or if pressed for time, just put it in the freezer for an hour or two so it sets).  Serve with any kind of crackers (especially good with wheat thins and ritz).

To make into an eyeball for Halloween, mix 1/4 cup ketchup with 2 tsp chili powder.  Put mixture into a small ziplock bag and clip a tiny piece of one corner off.  Squeeze mix in a vein design. Cut a spinach leaf into a circle for the middle of the eyeball and use half of a large olive as the pupil.

Patio Beans (a delicious version of baked beans!!!)

8 slices bacon (add more if you wish)
1 medium onion, chopped
1 lb can baked beans such as Bush's (I like the kind with brown sugar)
1 lb can kidney beans, drained
1 lb can lima beans, drained
1/4 pound sharp cheddar cheese, finely grated
1/2 cup brown sugar
1/3 cup ketchup
2 teaspoons worcestershire sauce
1/2 cup grated parmesan cheese

Fry bacon until crisp.  Saute onion in bacon drippings.  Combine in large casserole the beans, cheese, brown sugar and seasonings.  Stir in the onion and bacon which has been crumbled.  Sprinkle with parmesan cheese.  Bake at 350 degrees until heated thoroughly and bubbly.  Serves 6.

This is a great BBQ side dish and freezes great, too!

Celery bisque (aka creamy celery soup;)

3 Tbl butter
4 cups chopped celery (about 8 stalks)
1 1/2 cups chopped leeks (about 2 medium leeks) hint: they look like huge green onions & can be found in the refrigerated produce section
3/4 lbs diced potatoes (Yukon gold)
4 cups chicken broth
1/3 cups sour cream
1/4 tsp cayenne pepper (plus or minus depending on preference)

Melt butter over medium heat. Add celery & leeks & simmer, stirring frequently, until slightly softened (about 4 min). Add potatoes & broth & bring to a boil. Reduce heat to medium low and simmer until all veggies are tender (about 30 min). Purée in blender until smooth. Wisk in sour cream & pepper. Season with salt & pepper.

Note: this goes SO well with the crescent chicken pockets recipe!

Whipping cream biscuits

1 1/2 tsp sugar
2 cups flour
1 Tbl baking powder
1 tsp salt
1/4 cup unsalted butter (frozen)
1 cup + 2 Tbl whipping cream

Heat oven to 425 degrees. Sift dry ingredients. Grate the butter with a cheese grater (sounds weird but it gets the butter in little chunks:) & add to the dry ingredients. Using your hands, mix the grated butter into the dry ingredients. Add the cream & mix until just blended. Do not over mix. Turn dough onto floured surface & knead one or two times. Shape into a square with your hands & cut dough into 9 smaller squares. Place each square on an ungreased cookie sheet. Bake 12-15 min at 425 degrees.

Cream Cheese Frosting...YUMMY!

This frosting is great for cake, cupcakes, sugar cookies and any other frosting-related situation you can imagine:)

3 oz cream cheese
6 Tbl softened butter
2 cups powdered sugar
1 tsp vanilla
milk (if needed to thin the frosting)

Blend the cream cheese and butter with a mixer.  Add the powdered sugar and vanilla.  Add milk if it's too thick.  Can be spread or piped on.   

This recipe easily frosts a dozen sugar cookies.
