Chipotle Guacamole

This recipe came straight from Chiptole's website. Haven't tried it yet, but had to post it before I forgot;)

THIS IS ALL YOU’LL NEED:

  • 2 ripe Hass avocados (In the restaurant, we use 48 per batch, multiple times per day)
  • 2 tsp lime juice
  • 2 tbsp cilantro (chopped)
  • 1/4 cup red onion (finely chopped)
  • 1/2 jalapeƱo, including seeds (finely chopped)
  • 1/4 tsp kosher salt

 

HOW TO DO IT:

1. Choose the right avocado. It should feel squishy yet firm (like the palm of your hand), and be a nice dark green color on the inside.
2. Cut the avocado in half and the remove the pit (carefully!)
3. Scoop the avocados and place in a medium bowl.
4. Toss and coat with lime juice.
5. Add the salt and using a fork or potato masher, mash until a smooth consistency is achieved.
6. Fold in the remaining ingredients and mix well.
7. Taste the guacamole (over and over) and adjust seasoning if necessary.

Guacamole Chipotle Copycat

From Yum Sugar Website

INGREDIENTS

6 large ripe avocados, peeled and pitted
1/4 cup citrus (lemon and lime) juice
3 cups fresh cilantro, chopped
1 1/2 cups red onion, finely chopped
12 large serrano chilies, seeded and finely chopped (I have only ever used 2 chilies)
1 1/2 teaspoons salt
Tortilla chips, for serving

DIRECTIONS

  1. Using a fork, mash avocados with citrus juice in a small bowl.
  2. Add cilantro, chopped onion, serrano chilies, and salt. Stir to combine. Serve with tortilla chips, if desired.

Mom's Guacamole and 7 Layer Dip

Mom's Guacamole

1 large Avocado, crushed
1/2 C sour cream
1 clove garlic, crushed
1/2 tsp sugar
1/2 tsp chili powder
1/4 tsp Tobasco
1 T lemon juice
1/2 tsp salt

Mix and let chill in fridge for a day before serving.

Can be used on 7 layer dip. Here are Mom's favorite layers from bottom to top:

Refried Beans (canned)
Guacamole
Taco Sour Cream (1 C sour cream mixed with 1 packet of Taco seasoning and chilled for a day)
Shredded colby and jack cheese
Tomatoes
Green onions, finely chopped
Black Olives, sliced

Spinach dip



1 small pkg. chopped frozen spinach
3/4 cup mayonnaise
1/4 cup sour cream
1 packet dry onion instant soup/dip

·      Thaw spinach in microwave and drain water (if you’re in a time crunch you can also just put the spinach in frozen, but the dip turns our a bit runnier)
·      Mix all ingredients together in bowl (best if allowed to chill for an hour or two before serving)
·      Serve with sourdough bread for dipping

Mom's Vegetable Dill Dip

VEGETABLE DIP
1 Cup Sour cream
1 Cup Mayonnaise
4 Tbl. dill weed
1 tsp. Bon Appetite (or you can use equal parts celery salt and onion powder and STILL add the additional 1 tsp onion powder)
1 tsp. Onion powder
· Blend together and let sit for an hour or more (best if made the night before).
