Halloween Chili

 2 cans kidney beans

2 cans black beans

2 cans diced tomatoes

1 can corn

1 can stewed tomatoes

2 lb hamburger browned with 1 chopped onion and garlic 

1tbs chili powder

1/2 tbls cumin

salt pepper

Zulauf Chili

 From Aunt Kaye

Ingredients:

  • 1can kidney beans- drained and rinsed
  • 1 can pinto beans- drained and rinsed
  • 1 can Hormel Chili with no beans
  • 1 lb Ground Turkey- cooked with chopped onion and drained
  • 1 small can diced green chilis
  • 1 med can diced tomatoes- do not drain
  • 1/4 C of brown sugar
Directions
In a large pot, combine bean and chili. Mix well. Add ground turkey, green chilis, and tomatoes. Mix in the sugar. Allow to simmer for 1 hour. 

Tastes great the next day!

Grandma's Chili

This is my best notes from Mom's info about Grandma Costley's chili. I made it for a  Halloween Party and it was devoured!

For the meat, follow the Italian Meat Sauce recipe on the blog, but stop at Tomatoe paste on the ingredient list. I used two pound of meat for this recipe:

4 ounces white mushrooms , cleaned, stems trimmed, and broken into rough pieces
1 large slice high-quality white sandwich bread , torn into quarters Mom removes crust
2 tablespoons whole milk Mom uses half and half
Table salt and ground black pepper
1 pound 85 percent lean ground beef (see note and related content)Mom buys the 5lbs of Ground Beef at Costco and doubles this recipe for that much meat
1 tablespoon olive oil
1 large onion , chopped fine (about 1 1/2 cups)
1 Cup Finely chopped Celery
6 medium garlic cloves , minced or pressed through garlic press (about 2 tablespoons)
1/4 teaspoon red pepper flakes
1 tablespoon tomato paste

Follow the prep and cooking directions for the meat. 

Meanwhile, in a Crock Pot, on High add:
6 can of chili beans (pinto and/or kidney) drain 3 cans, and use the juice from the other 3
1 1/2 Cups Ketchup
2 cans of V-8
2 tsp Chili Powder
5 bay leaves

Let those ingredients simmer while you prepare the meat. 

Add meat directly from skillet, and let everything simmer for an hour or more. Before serving check to see if you need more salt. Serve warm with corn bread.

mom-White Bean Chicken Chili

1 stick butter
1/4 flour
1 tsp garlic
1/2 minced onion
1/4 C chicken broth
2 C half and half
1 tsp chili powder
1 1/2 tsp cumin
1 tsp tabasco
2 cans white beans (do not drain)
2 cans green chilis (diced do not drain)
4 chicken breasts-cooked-diced/cubed (or costco rotisserie de-boned chicken 1/2 package)

Side Items:
sour cream
jack cheese
limes mom recommends
tortilla chips- mom recommends

Directions:
1. large pot-boil chicken breasts-set aside-dice.  If you use the precooked costco rotisserie chicken, skip this step...obviously;)
2. melt 1 stick butter + 1/4 cup flour for about 3 min to make rue
3. add garlic+onion-mix well
4. Add broth + half and half- bring to a boil then simmer about 5 min
5. add beans, chiles, chili powder, cumin, tabasco
6. add chicken-simmer about 5 min
7. remove from heat.
8. serve with lime, tortilla chips, sour cream, and jack cheese

-the recipe doesn't call for salt, but a little bit makes it better in my opinion!

White Chicken Chili

White Chicken Chili

(From Cooking Light magazine)

Cooking spray

2 lbs chicken breast, cubed

2 cups chopped onion

2 garlic cloves, crushed or minced

2 tsp ground cumin

½ tsp dried oregano

1 tsp ground coriander

7-8 oz can, chopped green chiles, undrained

1 cup water

2 (15.5 oz) cans cannellini beans, rinsed and drained (Great Northern Beans are easier for me to find so I usually use those)

1 (14 oz) can chicken broth (or about 2 cups if you make your own using a chicken base)

½ tsp hot pepper sauce (I usually leave this out, but it doesn’t make it too spicy)

Optional toppings (I usually skip the cilantro):

1 cup shredded Monterey Jack cheese

½ cup chopped fresh cilantro

½ cup chopped green onions

Sour cream

Directions:

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 10 minutes or until browned, stirring frequently.

Heat a large pot or Dutch oven over medium-high heat. Coat pan with cooking spray. Add onion to pan; sauté 6 minutes or until tender, stirring frequently.

Add garlic and sauté 2 minutes, stirring frequently.

Stir in cumin, oregano, and coriander and sauté 1 minute.

Stir in chiles; reduce heat to low and cook 10 minutes, partially covered.

Add chicken, water, cannellini beans and broth; bring to simmer.

Cover and simmer 10 minutes.

Stir in hot sauce (optional) and top with (optional) toppings listed above

Recipe doubles or triples easily and freezes really well! Tastes great with No-Knead bread
