- 1 tbs olive oil
- 1 small shallot
- 2 tbs apple juice
- 1 C half & half
- 8oz cream cheese
- 1 C shredded Swiss cheese
- 1 tsp lemon juice
- 1/2 tsp ground nutmeg
- 1/2 tsp pepper
- Heat olive oil in a saucepan over medium heat. Add chopped shallots and saute for 2-3 min
- add apple juice and cook for 1-2 min. Juice will mostly evaporate
- Add half & half and reduce heat to low
- Add cream cheese pieces to pan. Allow to completely melt, stirring gently
- Add parmesan and swiss cheese. Stir until cheese is completely melted
- Stir in lemon juice, nutmeg and black pepper
- Serve
